MATCHA ENERGY BITES | Gluten Free + Vegan
Ingredients
4-6 Medjool dates, pitted
1 bag Victory Dance Foods Kale Matcha Garden Granola®
1/4 c peanut butter
1/4 c pistachios, shelled
2 tbsp chia seeds
1/4 c maple syrup or agave
2 tbsp matcha powder (I used @vitalproteins matcha collagen, I’ve also used organic (vegan) ceremonial matcha in this recipe.)
1/2 tsp sea salt
Instructions
Add the above ingredients (reserving 1 tbsp of the matcha) to a food processor and pulse until it starts to come together easily. It should be pretty sticky and should be able to form a ball easily.
Using a small cookie scoop, portion out the dough, and shape into balls.
Roll the balls into the reserved 1 tbsp matcha powder, place on a parchment lined baking sheet, and add to an airtight container and store in the fridge.
