Rainbow Sweet Potato Toast Trio Recipe by Danielle Bear @cacaoforcoconuts_

Looking for a colorful, nutrient-packed recipe to brighten up your day? This Rainbow Sweet Potato Toast Trio is the perfect addition to your #ToastTuesday routine. With three vibrant toppings featuring Victory Dance Foods' Garden Granola®, this trio brings a pop of color and a delicious crunch to your plate.

Ingredients:

• 1 Japanese sweet potato (other varieties work too)

• ½ ripe avocado

• 1 can cooked beets

• ⅔ cup white beans

• 1 clove garlic

• 2 tablespoons lemon juice

• Less than 1 teaspoon paprika

• Less than 1 teaspoon turmeric

• 3 varieties of Garden Granola®:

  • Garden Granola® Kale Matcha

  • Garden Granola® Beetroot Ginger

  • Garden Granola® Carrot Turmeric

• Tahini

Instructions:

1. Prepare the Sweet Potato Base:
   Slice a Japanese sweet potato into thick toast-like slices. Bake at 450°F for 20 minutes, flipping halfway through. Allow the slices to cool before adding toppings.
   Tip: For stability and safety, cut off one or both ends of the sweet potato before slicing.

2. Avocado Toast (Green):
   Mash half of a ripe avocado and spread it over a slice of cooled sweet potato toast. Top with Victory Dance Foods Kale Matcha Garden Granola®, which includes kale, matcha, cucumber, pineapple, and green apple for a fresh, crunchy finish.

3. Beet Hummus Toast (Red):
   For a flavorful beet hummus, blend the following ingredients:

   • 1 cup cooked beets

   • 2 tablespoons lemon juice

   • 1 teaspoon tahini

   • 1 garlic clove

   • ⅔ cup white beans

   • ¼ teaspoon paprika

   Spread the beet hummus over a toast slice and top with Victory Dance Foods Beetroot Ginger Garden Granola®, made with beetroot, pineapple, ginger, lemon, and apple.

4. Turmeric Tahini Toast (Yellow):
   Mix a pinch of turmeric into a few tablespoons of tahini. Spread this turmeric tahini mixture onto the final slice of sweet potato toast, then top with Victory Dance Foods Carrot Turmeric Garden Granola®, featuring carrot, turmeric, ginger, pineapple, and mango.

Baked Apples with Maple Butter Sauce Recipe

Enjoy these Oven Baked Apples Stuffed with Granuesli with a maple butter sauce for a breakfast on the sweeter side paired with greek yogurt or pair with ice cream for dessert! You can also substitute any of our gluten-free Mueslis in place of the Granuesli for something a little less sweet.

It’s a true crowd pleaser the whole family will enjoy, and it’s 100% gluten-free and also free of refined-sugar

Ingredients

• 6 apples, cored

• 1-2 cups Granuesli® Cranberry Apple Pecan

• 3 tablespoons butter

• 2 tablespoons maple syrup

• Cinnamon for sprinkling

Instructions

1. Preheat oven to 350 F

2. in a small saucepan, melt butter and combine with maple syrup

3. Fill cored apples with Granuesli

4. Drizzle butter & maple syrup mixture evenly over the apples

5. Sprinkle cinnamon on each apple

6. Bake apples for 30-45 minutes depending on how soft you’d like the apples to be.

7. Serve with your favorite yogurt or even ice cream. 

Note: And no shame if you go back and scoop some of the buttery mix off the bottom of the pan

Tropical Nice Cream Heart-Eyes Smoothie bowl by @Cacaoforcoconuts_

This veggie-powered Tropical Nice Cream Heart-Eyes Emoji Bowl  by Danielle aka @Cacaoforcoconuts_ topped with Garden Granola Beetroot Ginger makes us feel exactly like the heart-eyes emoji it represents! Enthusiastically In LOVE!! 
So we are thrilled to share Danielle’s recipe here so you can recreate this tropical treat at home. We hope this recipe brightens your day and brings a smile to your face, like it did to ours!

Ingredients

• 1 cup frozen riced cauliflower ⁣
• 1 cup frozen mango chunks ⁣
• 3/4 cup @sproutliving coconut water⁣
• 2-3 coconut milk ice cubes (I always freeze nut milk if I won’t be able to use it all!)⁣
• 1 tsp fresh ginger⁣
• 1/2 cup frozen papaya chunks⁣
• 1/2 frozen naval orange⁣

Steps:

1. Add all of the ingredients to your blender and mix.

2. After you’re done blending, use a spatula to get it out of the blender, add it to your favorite bowl and smooth out the top with spatula so you have a nice surface to make the face.

3. AND then for the final step! Top with Garden Granola® Beetroot Ginger in the shape of the heart-eyes emoji! Those are the cranberries and pepitas making the mouth! So cute!

POP UP GROCER ANNOUNCES VICTORY DANCE FOODS TO BE FEATURED AT AUSTIN LOCATION OPENING JUNE 2020

Pop Up Grocer, the world’s first-ever traveling pop-up grocery store concept, announces with tremendous enthusiasm and new operations set in place, their next location in Austin, Texas this Summer. Opening June 5th in Austin, VICTORY DANCE FOODS, will be one of over 100 select brands showcased.

Pop Up Grocer is in a unique position to provide both an essential service—groceries for the local area—and essential feelings—happiness and a sense of normalcy. As a platform for exposure and visibility, Pop Up Grocer exists to introduce visitors to only the best of what’s available in care of the body, mind and home.

In moving forward with the opening of their Austin location, Pop Up Grocer will go above and beyond to cater to every necessary precaution for visitors and staff to feel safe, including but not limited to:

+ Face masks will be required and hand sanitizer will be made available upon entry; social distancing encouraged with floor markers.

+ A limit of no more than 4 customers in store at a time.

+ Appointment-only hours will be between 9 and 10AM each day, for visitors not comfortable sharing the space inside with others. Appointments will be scheduled via the Pop Up Grocer website (link to follow).

+ After Hours Events will shift to virtual programming featuring tastemakers and industry experts (schedule to follow).

+ Items purchased and taken home will be pulled from the stockroom, where sanitized.

+ As always, 5% of Pop Up Grocer in-store profits will be donated to charity, this time to All Together ATX, an organization supporting people in the Greater Austin area with immediate needs including food insecurity, basic needs, medical needs, employment, and child care.

Recipe: Vegan Sweet Potato Toast with chive cream cheese, VDF Carrot turmeric granola, manuka honey and parsley

Have you heard sweet potatoes 🍠 are the new toast!? And these sweet tater slices topped with ✨Carrot Turmeric Garden Granola ✨by @alisondoesitbetter really got our attention! Enjoy for breakfast, lunch or any time of day!

Recipe:
Vegan Sweet Potato Toast with chive cream cheese, VDF Carrot turmeric granola, manuka honey and parsley

Ingredients

• 1 sweet potato

  • the bigger and relatively tube shaped sweet potatoes will be easier to cut

• 1-2 tbsp of @kitehillfoods chive cream cheese⁣⁣⁠

• 1 Half of a mashed avocado 

• salt & Pepper to taste

• 1/3-1/2 cup Victory Dance Foods Carrot Turmeric Garden Granola

• small bunch Parsley⁣⁣⁠ (washed and dried)

• 1-2 tbsp manuka honey ⁣⁣⁠

Steps:
1. wash and scrub your sweet potato
2. Pat dry with paper towel or let air dry
3. Slice ! Start by slicing one end of the sweet potato so that it can sit on the cutting board. Using a large sharp knife cut the sweet potato lengthwise into 1/4 – 1/3 inch slices. 
tips: You don’t want to cut it to thin or the slices won’t hold up. A mandolin slicer can also be used if you have one.
alternative method: You can boil the sweet potato for 5 minutes then let it fully cool before slicing it.
4. Place slices in toaster. you will have to experiment here on settings the goal is to get them to be fork tender. (a conventional toaster or toaster oven can be used)
5. let cool briefly on wire rack
6. add toppings! in the order they are listed above!
