Peanut Butter Banana Nice Cream Smoothie Bowl with Kale Matcha Granola

Serves 1 · Gluten-Free · Vegan · Prep Time: 5 minutes · Total Time: 5 minutes

Let’s be honest— there’s something deeply satisfying about the classic combo of peanut butter and bananas—especially when it comes in the form of a thick, creamy smoothie bowl that feels like dessert. This gluten-free, dairy-optional breakfast blends frozen banana into a soft-serve-style base (hello, nice cream) with cinnamon, vanilla, and a salty-sweet finish. Topped with your new fave granola, Garden Granola® Kale Matcha, that pairs perfectly with this delicious smoothie. Prepare to indulge!

Ingredients

For the smoothie

  • 2 frozen bananas

  • ¼ cup milk (or non-dairy alternative for vegan)

  • 1 tablespoon peanut butter

  • 1 teaspoon vanilla bean paste or extract

  • Pinch of cinnamon

  • Pinch of sea salt

For Topping

  • Sliced banana

Instructions

  1. Place the frozen banana pieces, milk, peanut butter, vanilla, cinnamon, and sea salt in a high-speed blender.

  2. Blend starting on medium speed and gradually increasing speed to high, for 1 to 2 minutes, until the consistency is smooth and creamy, like soft-serve. Stop your blender occasionally to mix the ingredients together and push them down with a smoothie stick. Add a splash more milk if needed to get things moving.

  3.  Pour into a serving bowls and smooth the top using the back of a spoon. Add sliced banana, a dollop of peanut butter, and a generous handful of Kale Matcha Garden Granola®.

  4. Grab a spoon and dig in while it’s cold, creamy, and perfect.

Make It Your Own (Because You’re the Boss of Breakfast)

This Smoothie meets Nice Cream bowl is a template. Here are a few ways to riff, remix, and make it your own:

  • Try a different nut butter: Cashew is subtly sweet. Tahini is cool and nutty. Almond feels a little fancy.

  • Need greens? Toss in a handful of spinach. You won’t taste it. Promise.

  • Make it Sweeter: Add 2-3 pitted medjool dates

  • Protein it up: Add a scoop of your favorite vanilla or unflavored protein powder, or stir collagen peptides into the milk before blending. (Bonus: it makes the texture even creamier.)

  • Switch the crunch: Try it with a different Garden Granola® flavor or Granuesli®.

  • Feeling extra? Drizzle with a little chocolate sauce. No judgment. Only joy.
